Sweet Potato & Carrot Waffle Burger with Cheese & Siracha Charcoal Cooking Recipes

Ingredients

Waffles

  •  220g Carrot, peeled and grated
  •  265g Sweet Potato, peeled and grated
  • 125g Cheese, grated 
  • 70g Plain Flour 
  • 1 Spring onion- finely chopped
  • 1 tbsp Chopped fresh parsley
  • 3 Eggs, lightly beaten

Burgers

  • 450g Ground chuck mince 
  • 10g Salt and pepper, to taste
  • 8 Slices cheese
  • Sliced pickled Gherkin 
  • 50g Siracha mayo sauce 
  • 50g Barbecue sauce 

Method

To celebrate international waffle day this year we asked our chef Chris to give us something absolutely moreish and filthy all at the same time, what he gave us is this drool inducing wonder. A fantastic savoury carrot & sweet potato waffle (that is superbly tasty on its own BTW ) sandwiching umami rich puck size patties of tender beef laden in gloriously gooey cheese and grilled onions. The Binchotan coals worked their magic creating a sumptuous smoky flavour that enveloped the burgers making them the perfect Kasai grill food for parties or just a lazy weekend, drink in hand.

Sweet Potato & Carrot Waffle Burger with Cheese & Siracha

Place the grated sweet potato, carrot, salt, pepper, parsley, spring onion and cheese into a bowl and mix well 

Add the flour before adding the beaten eggs 

Cook in a preheated waffle iron for 2-3 minutes and set aside to cool 

Place the minced beef into a bowl and season well with the salt and pepper before shaping into 3 170g burgers (you can choose the thickness to your preference. 

Cook the burgers on the preheated Kasai grill brushing at each turn with BBQ sauce

Once cooked add the cheese slices and cover with a cloche to allow the cheese to melt. 

Build the burgers stating with a waffle topped with the pickled gherkins then the burger. 

Top the burger with Siracha mayo sauce and BBQ sauce before adding another burger. Repeat the Siracha sauce and BBQ sauce before finishing with the second Waffle. 

Devour and wonder about doing it all again!
